2022 Garagai Pastis deposit_11Pastis is anise flavoured French spirit local to the south of France. At Distillerie Garagai, star anise, licorice root, and a variety of fresh, wild plants are cultivated around the Sainte Victoire in Bouches du Rhne during spring 2022. Each plant is worked independently by infusion in hot water, maceration in a neutral alcohol base, and distillation using traditional stills over an open flame and in a bain marie, before assembly in the fall.
